The name with the geographical indication "Divin" refers to wine spirits made exclusively from distillates for cognac, aged in oak barrels for at least three years. Moldovan divins have a pleasant, glossy appearance; they contain no particles or precipitation. The color varies from bright golden to amber, depending on the degree of maturation. Consumers are offered an impressive bouquet of flowers, fruits, ether in the early years of maturation and an additional flavor of vanilla, chocolate, balsam, wood, coconut, coffee beans as the period of maturation increases.
The appearance of denomination "Divin"
In 1909, the French government issued a decree providing that only a drink that is produced in the Cognac regions, distilled and stored in oak barrels, can be called cognac. Since 1936, this drink was legislatively approved and protected by the Appellation d'Origine Contrôlée (protected designation of origin) regulations.
In 1958, several countries signed the Lisbon Agreement for the Protection of Appellations of Origin and their International Registration. After the proclamation of independence, Moldova also signed this agreement and other international documents in the field of protection of geographical names, designations of origin and traditional guaranteed products, refusing to use foreign names for own production.
Thus, it became imperative to find a different name for the Moldovan cognac and scientist Emil Rusu with his team came up with the name "divin", that comes from the term "distvin" (from wine distillate).
Therefore, since 1996, Moldovan cognac is officially called divin and it is not only a product name, but also a state trademark.
Currently, according to Moldovan Law on Vine and Wine, divin is defined as a strong alcoholic beverage, made from wine distillates, aged for at least 3 years, with softened water, sugar syrup and, if necessary, with added sugar and spirited water according to organoleptic and physic-chemical indicators established in the relevant technical regulations.
Geographical area of divin production
The geographical area where a divin can be manufactured is located in the continental zone, to the north of the Carpathian plateau, it includes the center of the country - the Codri zone and the southern part of the country - the Budjak zone.
The entire technological production cycle, including the cultivation of grapes for divin, the production of wine as raw material, the distillation, the maturing of distillates, the processing, packaging and labeling must be carried out in the given geographical area.
