The difference between craft and industrial ice cream
The biggest difference, but also the greatest advantage of craft ice cream, is the fact that it is a fresh product, made in small quantities, almost daily, which uses fresh, natural ingredients without adding any dyes and artificial preservatives to extend its shelf life.
The second difference is that industrial ice cream from the very beginning contains more air and water. For example, craft ice cream contains 25-33% of air, while industrial air volume is at least 70%.
Also the fat content in craft ice cream is only 5-10% of fat, while in industrial ice cream it is 15-25%. The creaminess of craft ice cream is provided by natural ingredients, while the creaminess of industrial one is caused by the high fat content, which can be harmful to our health.
In addition, thanks to fresh and carefully selected ingredients, craft ice cream differs from industrial by a more complex manufacturing process, which also entails higher costs. Thus, craft ice cream is usually more expensive than industrial one.
Craft Ice Cream Made in Moldova
Most of our consumers buy ice cream in stores or on the street, but few know that in Chisinau you can visit many cafes and restaurants that produce their own ice cream. Some of them took part in the tasting of Moldovan craft ice cream, which was organized by Madein.md on July 4, 2019. The participants had the opportunity to try ice cream and sorbet from five restaurants. At the event they were greeted with a glass of sparkling wine from the Nisporeni winery.

Hostaria Armacord is a traditional Italian restaurant that produces its own ice cream - a mixture of traditional sorbet and ice cream made from local ingredients: fresh or frozen fruit (berries, raspberries, strawberries and blackberries), sugar and cream. Using a kitchen robot, ice cream is prepared very quickly, and the consumer can be sure that he is tasting a fresh and natural product.
For those who adopted a vegan lifestyle, the best option would be the ice cream made by Bio Organic Raw Café. It is an ideal product for those who have lactose intolerance as it is made from vegetable milk, cashew nuts with cocoa, coconut, caramel, matcha tea, strawberries, mango or other fruits. Vegetable milk is made from almonds grown in Moldova, and as a sweetener they use honey from local producers.
