Vinification: The collected grapes are debunched and sent to crio-maceration. The crio-maceration technique implies keeping the must in contact with the grape pomace for 24 hours at a temperature of 2°C.
After rinsing, the must undergoes supervised alcoholic fermentation at a controlled temperature of 16-18°C. This allows the extraction of aromatic substances from grape peels, offering the typical wine aroma. The wine maturation takes place in stainless steel vessels.
